I'm obsessing over avocado at the moment. I've been eating them everyday for breakfast or brunch. Today's post is simple - I'm sharing my three favourite topping combos for avocado (I'm using some homemade tomato bread because that's just what I've fancied lately, but rye, sourdough, crackers, oatcakes, whatever carrier, it's completely your call), so lets get stuck in and I hope you enjoy!
GOAT'S CHEESE + TOASTED PUMPKIN SEEDS
Avocado
Goats Cheese
Chilli Flakes
Pumpkin Seeds
Cress
Toast some pumpkin seeds in a dry pan for a few minutes until the skins start to crack. Slice up an avocado and splay onto oatcakes. Crumble over fresh, lemony goats cheese, the toasted seeds. a sprinkling of chilli flakes and some cress.
SMOKED SALMON + WASABI
Avocado
Smoked Salmon
Wasabi
Dill
Slice up avocado and splay out onto oatcakes. Smear with wasabi and lay on rich smoked salmon. Top with a flourish of dill.
CHEESE + CHIVE
Avocado
Boursin (or any garlic-y roule)
Chia Seeds
Chives
