Super Healthy Pancakes Recipe | Weight Loss Wednesdays

So I can't decide what the best thing about these pancakes are. The fact that they're healthy, clean, low-cal, paleo, grain-free and use no sugar or flour? Or, that they're seriously delicious? Or, that you can get all that for only two ingredients?! If you only make one recipe today, make it this one, it'd be a fantastic healthy treat for your significant other on Valentine's morning!

But today's post is about these genius pancakes that have been doing the rounds on Instagram and Pinterest. I've fiddled around with the recipe and accompaniments slightly to suit my own tastes, which means topping my fluffy, delicious pillows with a healthy blueberry compote which turns itself into it's own sticky, fruity, syrup, yum.


Per portion for the pancakes, you will need:

1 banana (around 80g without the skin)
1 large egg

And that's it! For the blueberry sauce, you will need:

A punnet of blueberries (around 125g)
A tsp of cinnamon
A sachet of stevia

On with the super simple method.



Pop your chopped 'nana and egg into a blender. I use my knock-off Nutribullet (which is £10 off atm at £20!) but you can mush it all up by hand if you so wish.


Blitz until smooth and creamy.


Decant into your pan and cook on a med-high heat. For extra flavour, you can cook them in butter, ghee or coconut oil but I've gone with a pan spray to save a few extra calories!



While your pancakes are cooking, tumble your berries into a saucepan with your stevia, cinnamon and a tbsp or so of water to help them along. Warm them through on a medium heat until the berries pop and turn into a beautifully, jewel-toned syrup. I like to make extra to keep in the fridge and eat with yoghurt, mm mmm!



When holes start appearing in your pancakes and steam starts escaping around their perimeter, they're ready to turn. Flip them over and cook for a few minutes on the other side.


Pile 'em high and top with the blueberry sauce, hot from the pan, and any other toppings of your choice. I've gone for a little maple syrup and fresh raspberries, totally delicious!
