Clean Eating Chocolate Truffles

If you're trying to eat healthily and thought delicious sweet treats are off the menu, think again! These nutritious, metabolism-raising truffles are super tasty, easy to make and good for you. They make a great gift but make sure you make extra for yourself!






For the most delicious breakfast recipe that tastes completely devilish rather than saintly, check out my Clean Pancake Recipe, but for 12-16 of these decadent truffles, here's what you'll need:


250g of a high-cocoa content, dark chocolate, at least 70%
60g coconut oil
1 tsp vanilla paste/extract
A pinch of flaked sea salt
A selection of toppings, I've gone for chopped pistachios, toasted coconut and some naughty sugar sprinkles! (Obviously not clean, but you can easily omit!)

Lets get started!



Start off by melting your chocolate over a pan of simmering water, just don't let the water touch the bottom of the bowl!




When it becomes melty and sumptuous, add your coconut oil, vanilla and sea salt. Mix thoroughly until it becomes a delicious ganache and decant into a shallow dish. Pop into the fridge and leave to set completely.


This should take an hour or so, so in the meantime, you can get your toppings ready. Chop up your pistachios (or you can blitz them in a chopper if you like) and toast off your desiccated coconut flakes.


When your ganache has set, scoop out spoon-sized portions and roll into rough spheres. Pop each one into a cupcake case and back into the fridge to cool off.


When they've firmed up a bit, you can reshape them into more smooth specimens with the warmth of your hands before rolling them in the pistachios and coconut. For my delectably pink, sugary sprinkles, I've melted a little more chocolate, rolled the truffles in it and sprinkled with sprinkles and a little more sea salt.

Pop each truffle back into it's cupcake case and chill thoroughly.









Et Voila! Package up as a healthy but devilish sweet-treat gift or alternatively, eat all to yourself!
