BLUSH ORANGE WAFFLES
(gluten free + no waffle maker needed)

I woke up last Sunday morning, with an itching for waffles.

If every alternate (alternate to accommodate pancakes of course) weekend could include waffles for breakfast, then I would be a very happy camper. I mean, is there much better than dousing, what is essentially already dessert, in a gravy boat of syrup?

We've had a bag of coconut flour tucked away at the back of the kitchen worktop, lonely and unused, and it's happily a tasty way to turn ordinary waffles, gluten-free - which, for me, means all the taste and less of the bloat. And best of all, these particular waffles are baked in the oven, so no waffle-maker needed.

I also happened across these beautiful blush oranges whilst meandering around Waitrose, their segments speckled with cardinal ruby. There's a little twang of berry in their taste too which makes them deliciously interesting. Pair them with an orange blossom syrup and full-fat, creamy bio yoghurt, best enjoyed in bed with a newspaper. Well enough waffle-ing (hoho) - let me share the recipe with you ;)

I N G R E D I E N T S

Batter:
2 eggs
30g butter, melted
100ml milk
60g coconut flour
50g sugar
1/2 tsp baking powder
Dash of salt

Toppings:
50g sugar
50ml water
2 tsps orange blossom water
1 tbsp lemon juice
Yoghurt
Blood or blush oranges


M E T H O D

one. // Preheat an oven to 180 degrees celcius. For the syrup, warm the sugar and water in a pan, over a medium heat, until dissolved. Turn up to a gentle rolling boil and let thicken for a few minutes. Remove from the heat, mix in the lemon juice and orange blossom water and leave to cool.

two. // You can go about making the waffle batter in any manner you deem fit - I just tip all of the ingredients into a blender and only whizz until just combined. Leave the mixture to sit for a moment whilst you grease a silicone waffle mould with a dash of spray-able oil.

three. // Pour in the waffle mixture and bake in the oven for 25 minutes or until an inserted knife comes out clean and the waffles start pulling away from the sides of the mould. You can brush over just a smidge of melted butter around 10 or so minutes from the end for a richer colour.

four. // Dollop on some yoghurt, slices of blush orange and douse in syrup. Enjoy with a cup of herbally tea - mine's currently a hibiscus and lime.
